- 250 g chickpea soaked
- 2 g baking soda
- 50 g tahini
- 2 g cumin
- 2 g paprika
- 2 cloves garlic
- 10 ml lemon juice
- 50 ml ice water
Cook the Chickpeas
The next day, drain the chickpeas and transfer them to a sauce pan. Add baking soda and sauté on high heat for 3 minutes. Then, add 1.5 liters of cold water and bring it to a boil. Skim off the foam and remove any chickpea skins that float to the top. Reduce the heat and simmer for 30 minutes. Once the chickpeas are soft, remove from heat.
Transfer the cooked chickpeas to a food processor or blender and blend until smooth.
While the processor is running, gradually add tahini, lemon juice, salt, paprika, cumin, and crushed garlic.
Slowly add iced water to reach your desired consistency. The ice water helps maintain the creamy texture and color of the hummus.
Use Baking Soda: Adding a pinch of baking soda while cooking the chickpeas helps break down the skins and results in a creamier hummus. It also helps soften the chickpeas faster.
