  • 1 pot

Ingredients

  • 100 g beef tenderloin
  • 50 g onion julienne
  • 40 g broccoli florets
  • 30 g carrot julienne
  • 80 g zucchini julienne
  • 1 clove garlic
  • 100 g noodle boiled
  • 30 g red pepper
  • 20 g soybean sprouts
  • 40 g spinach
  • 20 g green bean
  • 5 g sesame roasted
  • 20 ml sunflower oil

noodle sauce

  • 70 ml soy sauce
  • 35 ml water
  • 30 ml rice vinegar
  • 35 g granulated sugar
  • 10 ml sesame oil
  • 10 g oyster sauce

Instructions

  • Start by preparing the sauce. In a bowl, whisk together soy sauce, water, rice vinegar, sugar, sesame oil, and oyster sauce until well combined.
  • Add oil to a wok pan, then sauté the beef tenderloin, onion, zucchini, garlic, red pepper, green beans, and carrot over high heat until softened, adding a little water if necessary.
  • Add the pre-boiled noodles to the wok.
  • Pour the sauce over the noodles and veggies, tossing everything together. Finally, add the broccoli and spinach, and sauté for another 2-3 minutes. This will help them stay firmer and retain their vibrant green color.
  • Take it off the heat, then top with soybean sprouts and toasted sesame seeds before serving.

Notes

Customize the Protein: While beef is delicious, you can easily swap it out for chicken, shrimp, or tofu depending on your preference or dietary needs. Tofu is a great vegetarian alternative and absorbs the sauce beautifully.
Add Heat (Optional): If you enjoy spice, add some chili flakes or fresh chopped chili to the stir-fry for an extra kick. Adjust the level of heat to your liking!
Don't Overcook the Greens: When adding broccoli and spinach, be sure not to overcook them. Sautéing for just a couple of minutes helps maintain their vibrant color and crunch.
Noodles: Make sure your noodles are cooked al dente before adding them to the stir-fry. This ensures they soak up the sauce without becoming mushy.
